Saltbush is a high protein tasty flavouring . The best part of the plant to use is the soft new foliage. It can be used in stuffings for chicken and lamb or fried gently as a garnish in salads and soups. The leaves can be eaten raw and have a lovely salty taste.
DESCRIPTION: This is an attractive small shrub with grey foliage and pink stems on the new shoots. It grows to 1m in height and 0.5m wide.
GROWING CONDITIONS: Saltbush likes a well-drained sunny position. It grows naturally in poor sandy coastal soils. Will tolerate frosts to -8C.
